Last Night's Dinner


For dinner the other night, I made stuffed chicken and an heirloom tomato salad.  Just stuffed the chicken with harvarti flavored with dill, seasoned with salt & pepper & cooked in olive oil.  I tossed the last of a jar of sun-dried tomatoes (the BEST from Trader Joe's--sorry Ash) on top.  The heirloom tomatoes were semi-local ones I found at Whole Foods that I arranged with a sweet Italian pepper, salt & pepper & olive oil.  Yum!  And super easy--I made it all in about 20 min!

  1. Very nice! I had a bologna sandwich with old bread. However I trimmed the crust & spread a very thin layer of mayo across the whole.

  3. Lol, I loe eeryone's different eating styles! We had leftover pasta salad that I made for food friday at school and a chicken breast breaded with breadcrumbs and italian seasonings. This stuffed chicken looks delicious!
